Founder Tori Parker is infinitely committed to Teton Lunch Counter & fueled by her love for the environment, food and a sense of grounding community. By Trade Tori has a Masters in Mechanical Engineering & 7 years experience in the built environment- namely commercial Net-Zero builds, Energy Efficiency, Renewable Energy & Sustainability. Tori is well-equipped with chef skills from international experiences & most recently Chez Panisse, in Berkeley California.

Victoria holds a Bachelor of Sciences in Business Administration (B.S. B.A.) in Hospitality Management with a concentration in Meeting & Event Planning from University of San Francisco. She is a long time resident of Jackson with a dynamic and sharp skill set that allow for efficient, reliable and untouched execution and Operations alongside her commitment to GAP, a local non profit that focuses on the well being and confidence of young women. 

Katy, originally from Buffalo, New York, has recently settled in after spending the summer of 2023 in Jackson. Her passions include meeting new people, environmental conservation, and cheering on Josh Allen. With over a decade of experience in the food industry, Katy brings valuable insights into optimizing our café's operations for maximum efficiency and precision. In her free time, she enjoys hiking, climbing, and practicing yoga, so we’re confident she’ll be a great fit here.

Toby strives to create a healthier and more inclusive food system through partnerships with local producers. He first got involved in food preparation at The Red Onion, a cafe in Burlington, VT that prided itself in making sandwiches on homemade bread with in-house roasted meats. In Wyoming, Toby further grew his passion for localized food by working at Sweet Hollow Farm based in Victor, ID, and Vertical Harvest, a hydroponic farm based out of Jackson. As a part-time musician, Toby envisions Lunch Counter Cafe as a hub that connects local producers, artists of all mediums, and community via nourishing and thoughtfully sourced food.
